Pre-heat your oven to 350 degrees.
The dry ingredients (mix together in a large bowl):
- 1 cup sugar
- 1 ½ cups oatmeal
- ½ cup chocolate chips/ raisins/ whatever your heart desires (optional)
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 ½ teaspoon cinnamon
- 2 ½ cups flour
The wet ingredients (mix together in a separate medium bowl):
Add the wet ingredients to the dry and mix well. This is a pretty thick dough so it will take some muscle to get it mixed well.
Put heaping spoon fulls of dough on a foil covered baking sheet. I have to hand-wash my dishes so I love using aluminum foil because it saves me clean up time. Go ahead and eat some of the dough, it is soooooo yummy!!!!!
Pop them in the oven for 10-15 minutes or until the tops are not shiny. They don't really spread out so you can put them fairly close to each-other.
Put them on a rack to cool (go ahead and eat a few... they really are yummy).
Look how fluffy and yummy they look!!!
To freeze them (if you haven't eaten them all), let them cool all the way. Place a few in a ziplock bag and use a straw to suck out extra air. When you want to eat them, pop them in the microwave for 30 seconds and enjoy.
I had planned on counting the cookies so I could put how many this made, but I ate a few before I remembered so I THINK it makes about 20 decent sized cookies. These really are very very good, even after being frozen.
I will post a non-food post soon. I really don't want this blog to be all about food. I have been trying to go to bed by 10 the last several nights. Today I woke up at 7am and wasn't super tired because I went to sleep at 10 last night. It was pretty awesome.
